dared to try cooking One egg in the lemon coconut oil. Did not try TWO eggs as I thought I would have to throw it out. It was delicious. This Essential Lemon Peel Oil is a different taste from lemon juice.
Scrambled eggs and cooked in it and tried that. Delicious again.
I made "toad in the hole" which is a piece of bread with a hole cut in the middle and an egg dropped into it and fried on both sides and again cooked in the lemon coconut oil. It was very good although this one needs perfecting. Maybe toast would be better.
For lunch I cooked an omelet as follows: two large organic eggs, fresh chopped chives from the garden. Trader Joe's Havarti cheese with dill a couple of slices dropped in the pan on the cooking eggs which were the two eggs beaten with 2 tablespoons of water.The chives added on top. All lightly fried in the lemon coconut oil. Cover the pan with a lid and after it begins to cook add water around the edges so that the steam generated cooks the top of the omelet.
The omelet was incredibly light and fantastic. The oil and water and lemon got into the omelet more than usual and made many fine bubbles in it. Fluffy and foamy and delicious. So would probably make a great Soufflé, something I have never cooked.
However, have probably cooked 1000 omelets or more for family and friends over many years and although my wife is a far better cook, I am regarded as the omelet expert and this was one of the best ones. The lemon flavor has a wonderful effect on the egg taste.
