Scrambled Eggs made with Organic Lemon Coconut

I dared to try cooking one egg in the lemon coconut oil. Did not try TWO eggs as I thought I would have to throw it out. It was delicious. This Essential Lemon Oil is a different taste from lemon juice and from the zest.

I followed with a multitude of egg dishes with great success especially an omelet with fresh chopped chives from the garden.

Cooked an OMELET as follows: two large organic eggs, beaten with 2 tablespoons of water, fresh chopped chives from the garden, (Trader Joe's Havarti cheese with dill), a couple of slices dropped in the pan on the cooking eggs.

The chives added on top, all lightly fried in the lemon coconut oil. Cover the pan with a lid and after it began to cook added water around the edges so that the steam generated cooked the top of the omelet. The omelet was incredibly light and fantastic. The oil and water and lemon got into the omelet more than usual and made many fine bubbles in it, fluffy and foamy and delicious.

What's in your coffee?

Drinks with lemon coconut oil. Many people have coconut oil on their coffee and I prefer Nature’s Approved Long Life oil or the regular. The benefit is that the mental and physical energy from the coconut oil grows and peaks in about 4 hours, well after the boost from the caffeine has subsided. Tried the lemon on coffee and tea but not as good as the other flavors. Went to Starbuck’s and bought a hot chocolate and it was fabulous on top. Far better than the chocolate alone. Tried it on hot water and it was good.

My Week...

Two Eggs with Lemon Coocnut Oil

Thursday
Frozen peas in a frying pan with a couple of tablespoons of lemon coconut oil was far better than in butter, which is what I usually do.

Sunday
dared to try cooking One egg in the lemon coconut oil. Did not try TWO eggs as I thought I would have to throw it out. It was delicious. This Essential Lemon Peel Oil is a different taste from lemon juice.

  Monday
Scrambled eggs and cooked in it and tried that. Delicious again.

 Tuesday
I made "toad in the hole" which is a piece of bread with a hole cut in the middle and an egg dropped into it and fried on both sides and again cooked in the lemon coconut oil. It was very good although this one needs perfecting. Maybe toast would be better.

 Wednesday
For lunch I cooked an omelet as follows: two large organic eggs, fresh chopped chives from the garden. Trader Joe's Havarti cheese with dill a couple of slices dropped in the pan on the cooking eggs which were the two eggs beaten with 2 tablespoons of water. The chives added on top. All lightly fried in the lemon coconut oil. Cover the pan with a lid and after it begins to cook add water around the edges so that the steam generated cooks the top of the omelet.

The omelet was incredibly light and fantastic. The oil and water and lemon got into the omelet more than usual and made many fine bubbles in it. Fluffy and foamy and delicious. So would probably make a great Soufflé, something I have never cooked.

However, have probably cooked 1000 omelets or more for family and friends  over many years and although my wife is a far better cook,  I am regarded as the omelet expert and this was one of the best ones. The lemon flavor has a wonderful effect on the egg taste.
